Should you put a quote in a recruitment ad?

Usually not a famous one. In a job ad, the space is better spent on pay, shift and location. The quote that does work is one from a current employee about the actual job, with their first name and role, because it tells the candidate something true about the workplace that a famous line cannot.

How can you tell if a hiring quote is real?

Look for the original: a book with a page or edition, a dated speech, a shareholder letter or the person’s own post. If every source is a quote site or a slide deck and none names where or when it was said, treat the attribution as unverified and either drop the name or drop the quote.
